These savory, sweet wings are guaranteed to be a huge hit whether served at family dinner or a tailgate party! If you’re new to brining chicken with espresso, you’re in for a sure treat. The strong, dark coffee adds an unexpected, yet extremely subtle, flavor along with an inviting mahogany hue. That, paired with savory spices and a sweet maple glaze, makes these wings unbeatable.
Here’s the recipe:
Brine
1.5 c. Espresso or strong brewed coffee cooled
2 c water
3 Bay leaves
3 T. Salt
Now, add 3 lbs of chicken wings, seal your bowl or bag, and place in the fridge for at least 6 hours. Do note, you can brine the chicken up to 24 hours. Place all the brine ingredients in a bowl or ziplock bag, seal, and give a good shake.
Once your chicken is thoroughly brined, preheat oven to 375°F and prepare the spice mix.
Spice Mix
1 T. Fine ground espresso
1 t. Salt
2 t. Paprika
2 t. Garlic powder
1.5 t. Thyme
1/2 t. Allspice
1 t. Oregano
1 t. Poultry seasoning
1/2 t. Cayenne
1/2 c. Maple Syrup for glazing
Drain and pat dry the wings before placing on a parchment-lined pan with greased rack atop. Evenly sprinkle and rub seasoning mix on wings, and then place in oven.
After 15 minutes, take the wings out and lightly baste them with maple syrup. Cook for an additional 10-15 minutes. Baste a second time, and then broil for 3-5 minutes to caramelize sugars.
