HOW TO MAKE THE BEST COOKIES EVER!

INGREDIENTS:

  • 1 ½ c. flour
  • 1 t. baking powder
  • ½ t. baking soda
  • 1 t. salt
  • 2 sticks unsalted butter, room temperature
  • ½ c. granulated sugar
  • 1 c. light brown sugar
  • 1 egg
  • 2 t. vanilla extract
  • 1 c. oatmeal
  • 1 c. semi-sweet chocolate chips
  • ½ c. white chocolate chips
  • ½ c. chopped pecans, optional
  • 1 t. cinnamon

DIRECTIONS:

Preheat oven to 350°.

Whisk flour, baking powder, baking soda, and salt in medium bowl. 

In another bowl, beat butter and sugars at medium-low speed until just combined, about 20 seconds.  Increase speed to medium and continue to beat until light and fluffy, about 1 minute longer.  Scrape down bowl with rubber spatula.  Add egg and vanilla and beat on medium-low until fully incorporated, about 30 seconds.  Scrape down bowl again.

Mix dry ingredients slowly and gently until blended.  Chill thoroughly.

Roll dough into balls of desired size and bake, or roll into a log of desired diameter and refrigerate or freeze, covering with waxed paper or plastic wrap and foil.  Slice and bake whenever needed.  Place on ungreased cookie sheet and bake on middle rack of oven.

Cook for about 13-16 minutes, turning the cookie sheet half-way through cooking.  Cool and then remove to wire rack.  Do not overcook.
